George Nickols doesn’t want to have to answer to anyone else. He decided to start his own food truck business in 2014 so he could run the show. George has always been interested in cooking and since food trucks were all over his hometown in California, he decided to bring a piece of that to Columbia.

Before this, he was unemployed and lived at home taking care of Lilly, the daughter that he adopted into his life after marrying her mother. He just recently finalized a divorce and is working on his new life living alone. His ex-wife and daughter have moved to St. Louis, leaving him in Columbia alone to run his business, Lilly’s Cantina.
